- 6 cups all-purpose or bread flour
- 2¼ teaspoons (1 packet) instant or active dry yeast
- 2 teaspoons salt
- 1 tablespoon sugar
- 2¼ cups warm water (105–110°F)
- 2 tablespoons olive oil
- Melted vegan butter for brushing, optional
RECIPE
A straightforward two-loaf vegan peasant bread.

METHOD
Combine the flour, yeast, salt and sugar in a large bowl.
Add the warm water and olive oil. Stir until a shaggy dough forms.
Knead for 8–10 minutes until smooth and elastic, adding flour one tablespoon at a time if sticky.
Place in a lightly oiled bowl, cover and let rise about 1 hour, until doubled.
Punch down and divide into two equal pieces.
Shape into round or oval loaves and place on a parchment-lined baking sheet or in two greased loaf pans.
Cover and let rise another 30–45 minutes.
Bake at 375°F for 30–35 minutes, until golden and hollow-sounding when tapped.
Brush with melted vegan butter for a softer crust, if desired.
