Make selected dinners as 10–12 servings when you want substantial next-day lunches.

No-bake: chocolate pudding, banana pudding, peanut butter oatmeal cookies, chocolate oat bars, peanut butter banana cups, fruit-and-pudding parfaits, applesauce with granola, banana split bowls, cinnamon tortilla crisps, pumpkin pudding, prepared-crust chocolate or citrus pie and frozen banana soft serve.

Baked: chocolate depression cake, spice cake, banana bread, apple crisp, pumpkin pie, apple pie, oatmeal cookies, peanut butter cookies or muffins.

KEEP IT AFFORDABLE

The rules that make the plan work

Use dry beans and lentils for at least half the bean meals. Use canned when time matters more than cost.

Make tofu, chickpeas, lentils and beans the standard proteins.

Use burgers, nuggets, hot dogs, vegan sausage and cheese as supporting convenience foods.

Use vegan cheese where it matters most: quesadillas, mac and cheese, nachos, enchiladas and loaded potatoes.

Build around potatoes, onions, carrots, cabbage, greens, tomatoes, cucumbers, peppers and frozen vegetables.

Buy avocados, berries, grapes and specialty produce primarily when they are on sale.

Cook one large pot of beans and one large batch of rice early each week.

Bake two loaves at once and freeze one when useful.

Use delicate greens early. Save cabbage, kale, bean salads and frozen vegetables for later.

Keep one emergency meal: pasta and sauce, rice and beans, chili potatoes, nuggets and fries, or soup and sandwiches.
