INGREDIENTS

12 rolls

Dough

  • 1 cup rolled oats
  • 1 cup boiling water
  • 2¼ teaspoons quick-rise or instant yeast
  • 3½ to 4 cups all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon salt
  • ½ cup unsweetened plant milk, warm
  • ¼ cup maple syrup
  • ¼ cup neutral oil or melted vegan butter

Filling

  • ½ cup brown sugar
  • 1½ tablespoons ground cinnamon
  • 3 tablespoons softened vegan butter

Simple glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons plant milk
  • ½ teaspoon vanilla

METHOD

Make it

  1. 1

Put the oats in a large mixing bowl. Pour the boiling water over them and let them sit for about 15 minutes, until softened and no longer hot.

  2. 2

Add the warm plant milk, maple syrup, oil, sugar, salt and yeast. Stir well.

  3. 3

Add 3½ cups flour and mix until a soft dough forms. Add more flour a little at a time only if the dough is too sticky to handle.

  4. 4

Knead for about 6 to 8 minutes, until smooth and elastic. The dough may remain slightly tacky because of the oats.

  5. 5

Place the dough in a lightly oiled bowl, cover it, and let it rise for 45 to 60 minutes, or until doubled.

  6. 6

Mix the brown sugar and cinnamon in a small bowl.

  7. 7

Roll the dough into a rectangle about 12 by 18 inches.

  8. 8

Spread the softened vegan butter over the dough. Sprinkle the cinnamon-sugar mixture evenly over the surface.

  9. 9

Roll the dough tightly from the long side into a log.

  10. 10

Cut into 12 rolls and place them in a greased 9-by-13-inch baking dish.

  11. 11

Cover and let rise for 25 to 40 minutes, until puffy.

  12. 12

    Heat the oven to 375°F.

  13. 13

Bake for 22 to 28 minutes, until the tops are lightly browned and the centers are baked through.

  14. 14

Mix the powdered sugar, plant milk and vanilla. Drizzle over the warm rolls.

Cooking notes

  • After shaping, cover and refrigerate overnight. Let sit at room temperature 45–60 minutes before baking.
  • Optional: add ½ cup raisins or chopped walnuts to the filling.
  • Leftover-oatmeal variation: replace the rolled oats and boiling water with about 1½ cups cold cooked oatmeal. Begin with ¼ cup plant milk, adding more only if dry. Flour may range from about 3½ to 4½ cups depending on moisture. Cool oatmeal before adding yeast.

Serving suggestions

  • Oatmeal, fruit, tofu scramble or vegan breakfast sausage.
