Puff pastry filled with mushrooms, lentils and spinach.

6–8 servingsMain dishes

INGREDIENTS

6–8 servings

  • 2 sheets vegan puff pastry, thawed
  • 2 Tbsp olive oil
  • 24 oz mushrooms, finely chopped
  • 1 large onion, finely diced
  • 4 cloves garlic, minced
  • 2 cups cooked brown or green lentils, well drained
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • 1 Tbsp soy sauce
  • 1 Tbsp Dijon mustard
  • ½ tsp black pepper
  • Salt to taste
  • ½ cup breadcrumbs
  • Plant milk or melted vegan butter for brushing

METHOD

Make it

  1. 1

Cook the onion in oil for about 5 minutes.

  2. 2

Add the mushrooms. Cook over medium-high heat until they've released their liquid and the pan becomes fairly dry, about 10–15 minutes. This is important or you'll get soggy pastry.

  3. 3

Add garlic, thyme, rosemary, soy sauce, Dijon and pepper. Cook another minute.

  4. 4

Add spinach and cook until wilted and excess moisture has evaporated.

  5. 5

    Stir in the lentils.

  6. 6

Add breadcrumbs until the mixture holds together without being wet.

  7. 7

    Cool the filling completely.

  8. 8

    Heat oven to 400°F.

  9. 9

Lay out the puff pastry. Spoon the filling into a compact loaf down the center.

  10. 10

Fold the pastry around the filling and seal the seam and ends. Place seam-side down.

  11. 11

Score the top lightly with a knife and brush with plant milk or melted vegan butter.

  12. 12

Bake 30–40 minutes, until deeply golden.

  13. 13

    Rest 10 minutes before slicing.

Cooking notes

  • Cool filling completely and cook off moisture to avoid soggy pastry.
  • Mushroom-walnut variation: replace about 1 cup of lentils with 1 cup finely chopped toasted walnuts.
