Plant-Based Chick'n & Rice Casserole

Creamy plant-based chick'n and rice casserole.

  • 1 package plain Tofurky Chick'n Pieces
  • 2 cups uncooked long-grain rice
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 8 oz mushrooms, sliced, optional
  • 2 Tbsp vegan butter
  • 2 Tbsp olive oil
  • Cream sauce: 3 Tbsp vegan butter
  • Cream sauce: 3 Tbsp flour
  • Cream sauce: 2 cups unsweetened oat or soy milk
  • Cream sauce: ¼ cup nutritional yeast
  • Cream sauce: 1 tsp garlic powder
  • Cream sauce: 1 tsp onion powder
  • Cream sauce: 1 tsp dried thyme
  • Cream sauce: salt and pepper
  • Optional topping: 1 cup shredded vegan cheddar
  • Optional topping: buttered breadcrumbs

METHOD

Make it

    Cook rice in vegetable broth until just tender.

    Sauté onion, celery, carrots and mushrooms in butter and olive oil about 8 minutes.

    Add garlic and cook 30 seconds.

    Stir in chick'n and cook 3–4 minutes.

    Make the cream sauce by melting butter, whisking in flour and cooking 1 minute; slowly whisk in plant milk, stir until smooth, then add nutritional yeast and seasonings.

    Combine rice, vegetables, chick'n, peas and cream sauce.

    Pour into a greased 9×13-inch baking dish.

    Top with vegan cheese or breadcrumbs if desired.

    Bake at 375°F for 25–30 minutes, until bubbly.
