  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon or yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons vegan butter

Roasted vegetables

  • 4 carrots, sliced
  • 2 onions, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

METHOD

Make it

  1. 1

    Preheat oven to 425°F.

  2. 2

Toss potatoes, carrots and onions with olive oil, garlic powder, thyme, salt and pepper.

  3. 3

Spread on two baking sheets. Roast 30–40 minutes, turning halfway through.

  4. 4
