Homemade Bean Burgers

Pantry-based homemade vegan bean burgers.

INGREDIENTS

  • 2 cans black beans, or 1 black and 1 kidney, drained and rinsed
  • 1 cup rolled oats
  • ½ cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste or ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons ground flaxseed mixed with 5 tablespoons water; let stand 10 minutes
  • 1–2 tablespoons oil for cooking

    Mash beans in a large bowl, leaving some chunks for texture.

    Add oats, breadcrumbs, onion, garlic, tomato paste, soy sauce, mustard, spices and flax mixture.

    Mix thoroughly.

    Let rest about 10 minutes so oats absorb moisture.

    Adjust texture with breadcrumbs if too wet or a little water if too dry.

    Form into 8 patties.

    Refrigerate 20–30 minutes if time allows.

    Cook in a lightly oiled skillet over medium heat 5–6 minutes per side, or bake at 400°F about 30 minutes, flipping halfway through.
