INGREDIENTS

About 14–16 patties

Ingredients

  • 4 cans black beans, drained and rinsed, or 3 cans black beans plus 1 can kidney beans
  • 1 medium onion, finely diced
  • 1 green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1½ cups breadcrumbs, plus more if needed
  • 2 tbsp soy sauce
  • 1 tbsp vegan Worcestershire sauce
  • 2 tbsp ketchup
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil, plus a little for cooking
  • 2 tbsp ground flaxseed + 5 tbsp water

METHOD

Make it

  1. 1

Mix ground flaxseed with 5 tbsp water; stand 5–10 minutes.

  2. 2

Sauté onion and green pepper in a little oil 6–8 minutes, adding garlic for last minute. Cook off excess moisture.

  3. 3

Drain beans very well and mash, leaving small pieces. Mix in cooked vegetables, flax mixture, soy sauce, vegan Worcestershire, ketchup and seasonings. Add breadcrumbs and rest 10 minutes.

  4. 4

If wet or sticky, add another 1/4–1/2 cup breadcrumbs. Shape 14–16 bun-sized patties about 1/2–3/4 inch thick.

  5. 5

Bake at 400°F 25–30 minutes, flipping after about 15 minutes; lightly oil or spray both sides. Alternatively cook in a little oil over medium heat 4–5 minutes per side, waiting for a crust before turning.

Cooking notes

  • Use 4 cans black beans, or 3 black plus 1 kidney. The source does not recommend a 50/50 mix for this recipe.
  • Distinct from the site’s homemade-vegan-bean-burgers: this four-can version uses pepper, sautéed vegetables, more breadcrumbs, cumin and Worcestershire rather than its oat-and-mustard formula.

Serving suggestions

  • Buns, lettuce, tomato, onion, pickles, ketchup, mustard, fries and salad.
