8–10 servingsMain dishes

INGREDIENTS

8–10 servings

Tofu

  • 4 blocks extra-firm tofu (14–16 ounces each)
  • 3 tablespoons soy sauce
  • 2 tablespoons neutral oil
  • 3 tablespoons cornstarch
  • 1 teaspoon garlic powder

Homemade teriyaki sauce

  • ½ cup soy sauce
  • ½ cup water
  • ⅓ cup brown sugar
  • 3 tablespoons maple syrup
  • 3 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

METHOD

Make it

  1. 1

Press the tofu for 30 minutes. This removes water and helps it become firmer.

  2. 2

    Cut into uniform ¾-inch cubes.

  3. 3

Toss with soy sauce, oil and garlic powder. Sprinkle cornstarch over the cubes and mix gently.

  4. 4

Arrange on two lightly oiled baking sheets with space between cubes.

  5. 5

Bake at 425°F for 30–35 minutes, flipping halfway through. Look for browned edges and a firm, slightly chewy exterior.

  6. 6

Meanwhile, simmer all sauce ingredients except the cornstarch slurry for 5 minutes.

  7. 7

Stir in the slurry and cook until the sauce becomes thick and glossy.

  8. 8

Transfer the hot tofu to a large bowl. Add just enough warm sauce to coat it thoroughly, tossing gently.

  9. 9

Serve immediately, with extra teriyaki sauce on the side.

Cooking notes

  • AMC-inspired recreation, not an official hut recipe.
  • Keep sauce thick and glaze just before serving; do not simmer crispy tofu in sauce.
