INGREDIENTS

8 servings

Loaf

  • 1½ cups dry brown or green lentils
  • 4 cups water or vegetable broth
  • 1 large onion, finely diced
  • 2 carrots, finely diced or grated
  • 2 celery stalks, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon oil
  • 1½ cups rolled oats
  • ½ cup breadcrumbs
  • 3 tablespoons ground flaxseed
  • ½ cup water
  • 3 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon sage or poultry seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Glaze

  • ½ cup ketchup
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon mustard
  • 1 teaspoon apple cider vinegar

METHOD

Make it

  1. 1

Rinse the lentils. Combine them with the water or broth and simmer for about 25 minutes, until tender. Drain very thoroughly.

  2. 2

Mix the ground flaxseed with ½ cup water. Let it stand for 10 minutes to thicken.

  3. 3

Cook the onion, carrots and celery in oil over medium heat for 8 to 10 minutes. Add the garlic and cook for another minute.

  4. 4

Heat the oven to 375°F. Grease a 9-by-5-inch loaf pan or line it with parchment paper.

  5. 5

Put about half the cooked lentils in a large bowl and mash them with a potato masher. Leave the other half whole for texture.

  6. 6

Add the cooked vegetables, oats, breadcrumbs, flax mixture, tomato paste, soy sauce, maple syrup and seasonings.

  7. 7

Mix thoroughly. The mixture should be moist but firm enough to hold its shape. Add a few more oats or breadcrumbs if it seems wet.

  8. 8

Press firmly into the loaf pan.

  9. 9

Mix the glaze ingredients and spread them over the top.

  10. 10

Bake for 45 to 55 minutes.

  11. 11

Let the loaf rest for at least 15 minutes before slicing. It firms considerably as it cools.
